Caramelized Onion, Poblano & Goat Cheese Quesadillas

These quesadillas are simple but delicious! Make more than you think you will need because they disappear quickly! Creamy soft goat cheese combines with mozzarella and slow caramelized onions and poblano chiles to create a wonderful pop of flavor. Use the best quality flour tortillas you can get, preferably house made from the Mexican market, or my fave in a pinch, Vista Hermosa Flour Tortillas. We show them here paired with Spicy Salsa Verde and Habanero Salsa. Whatever your favorite salsa is will do!
Ingredients
4 or more excellent quality flour tortillas
2 cups shredded mozzarella
8 oz soft goat cheese or chevre
1 large yellow onion
2 large fresh poblano chiles
2 tbsp butter
olive oil Toppings
Spicy Salsa Verde
Habanero Salsa
How to Make It
First Step: Prepare the poblanos & onions
Slice onions about 1/4 inch thick
Cut poblanos in half and remove seeds and stem, then slice in strips about 1/4 inch thick.
Heat a skillet with a coating of olive oil and add onions. Add about 1 tbsp of butter. Cook low and slow for about 10 min until they begin to become translucent.
Add poblanos and increase heat slightly. Cook until both onions and poblanos are soft (approx 10 minutes). Set aside and drain off any liquids.
Second Step: Assemble & Cook Quesadillas
Coat a skillet with a tad bit of olive oil. Turn the fire on low. Place 1 tortilla on the skillet and add about half a hand full of mozzarella, 1/4 cup of onions and poblanos and about 2 oz of goat cheese (or more if you LOVE goat cheese!). Close tortilla and press down with a spatula.
Cook until the tortilla begins to crisp and the cheese begins to melt.
Using a spatula, flip quesadilla and cook until the other side begins to crisp and the cheese melts.
Repeat for all quesadillas. Keep already finished quesadillas in the oven at 300° on a cookie sheet while you finish the rest.
Serve immediately with your favorite salsa.
