Creamy Tomato Soup with Feta & Orzo

This wholesome yet simple soup will soon become a family favorite. Use the best quality canned tomatoes you can get, preferably Alta Cucina brand. Be sure to puree the soup long enough to make it luscious and velvety! The velvety soup paired with the chew of a little aldente orzo pasta and creamy salty goodness with crumbled feta is so yum!
Ingredients
2 16 oz cans of peeled whole tomatoes
1 small yellow onion diced
3 tbsp olive oil
1/2 cup chicken stock or veggie stock or 1/2 cup water with 1 tbsp chicken bouillon
1/2 cup heavy cream
white pepper to taste
salt to taste Toppings
1/4 cup crumbled feta (or more to your liking)
1 cup cooked orzo pasta (from about 1/2 cup dried orzo)
How to Make It
First Step: Prepare the Toppings
Crumble the feta and place in a little bowl for serving.
Boil orzo according to package instructions. Drain, rinse in cold water to stop the cooking process and set aside.
Second Step: Prepare the Soup
Heat a medium size pot with the olive oil. Add diced onion and gently sauté until onion becomes translucent. Careful not to burn the onion.
Add canned tomatoes, broth or water + bouillon and heavy cream. Simmer for 10 min until it reduces slightly. Add 1/4 tsp white pepper.
Using an immersion blender, puree soup until it is nice and creamy, fully pureed. Alternatively you could let the soup cool and puree in a blender.
Serve immediately with the toppings letting each person add orzo and feta to taste.
